Chocolate Salted Caramel Cupcakes

Here’s the deal. I had my first Chocolate Cupcake with Salted Caramel Icing last March. I was on my CakeSpy trip with my mom. We saw the Trophy Cupcakes cart across from the entrance of Nordstrom, and I just had to get one. They wrapped it in a box for me, and my mom and I went on our way to the store.

I couldn’t wait. It was absolutely impossible for me to wait to eat this incredible smelling treat until we made it back to the hotel. So here’s what happened. My mom tried on a shirt, and I may or may not have started eating the cupcake in the dressing room. I took another bite, and my mom shoved the rest of the cupcake in my face. And yes, this is absolutely one of the best memories I have with her.

Now, I’m not saying these cupcakes are as good as a Salted Caramel from Trophy Cupcakes, but boy, they come pretty darn close. It’s a simple combination, but one that will have you asking for more. These moist chocolate cupcakes are topped with Salted Caramel Icing and then drizzled with Salted Caramel Sauce. Talk about a match made it heaven.

Chocolate Salted Caramel Cupcakes

  • 1/4 C White Sugar
  • 1/2 C Brown Sugar
  • 3/4 C + 2 TBSP Flour
  • 1/4 C + 2 TBSP Cocoa Powder
  • 3/4 Tsp Baking Powder
  • 3/4 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1 Egg
  • 1/2 C Milk
  • 1/4 C Saffola Oil
  • 1 Tsp Pure Vanilla Extract
  • 1/2 Cup Water, Boiling

Preheat your oven to 350 degrees.

Mix all dry ingredients together. Add egg, milk, oil, and vanilla extract and beat well. Pour in boiling water, and stir the batter until well combined.

Using a measuring cup, pour batter into a lined or greased cupcake pan. The batter will be very thin, which is fine.

Bake for 20-22 minutes. Let cool completely.

Once cooled, top with Salted Caramel Icing and drizzle with remaining Salted Caramel Sauce.

Salted Caramel Sauce

  • 4 Tbsp Butter
  • 3/4 C Brown Sugar
  • 1/2 C Milk
  • 1/2 Tsp Pure Vanilla Extract
  • 2 Tsp Salt

Melt butter on low in a saucepan. Once melted, add brown sugar, milk, and vanilla and whisk together. Cook for 5 minutes on medium heat. Remove from heat, stir in salt, and let cool.

Salted Caramel Icing

  • 1/2 C Butter
  • 4 1/2 C Powdered Sugar
  • 1 Tsp Pure Vanilla Extract
  • 3 Tbsp Salted Caramel Sauce

Beat the butter and a 1/2 cup of the powdered sugar. Add the extract and Salted Caramel Sauce and continue beating. Continue to add powdered sugar until you reach your desired consistency.

  2. Salted caramel always makes me do that homer simpson drool sound. It’s not attractive. But that’s not the point.
