I’m just going to say it. If you don’t like the combination of chocolate and peanut butter, namely Reese’s Peanut Butter Cups, then you’re insane. That’s it. Plain and simple.
Chocolate and peanut butter is the most quintessential combination. And I know many others who feel the same way. Some may even say they have an addiction, and I might agree.
The American Heritage Dictionary defines the word addiction as, “a dependence” or “the condition of being habitually occupied with something.” I know when I have Reese’s in my house, I am certainly occupied by them. And no, you can’t pretend that you aren’t too.
These cupcakes begin with a simple chocolate cupcake. But they’re then filled with creamy peanut butter icing and then topped with even more. Drizzle them with melted chocolate and peanut butter and add chopped Reese’s, and there’s nothing else you would rather eat.
You can be on a diet some other day. Today, we’re celebrating this. Get on board!
Reese’s Peanut Butter Filled Chocolate Cupcakes
- 1/4 C White Sugar
- 1/2 C Brown Sugar
- 3/4 C + 2 Tbsp Flour
- 1/4 C + 2 Tbsp Cocoa Powder
- 3/4 Tsp Baking Powder
- 3/4 Tsp Baking Soda
- 1/4 Tsp Salt
- 1 Egg
- 1/2 C Milk
- 1/4 C Saffola Oil
- 1 Tsp Pure Vanilla Extract
- 1/2 Cup Water, Boiling
Preheat your oven to 350 degrees.
Mix all dry ingredients together. Add egg, milk, oil, and vanilla extract and beat well. Pour in boiling water, and stir the batter until well combined.
Using a measuring cup, pour batter into a lined or greased cupcake pan. The batter will be very thin, which is fine.
Bake for 20-22 minutes. Let cool completely.
Once cooled, fill each cupcake with peanut butter icing. To do so, fill a large piping bag fitted with a star tip with peanut butter icing. Push the icing tip into the cupcake, and squeeze the bag while lifting the piping bag out of the cupcake. Once filled, top with more peanut butter icing and drizzle cupcakes with melted chocolate and peanut butter, if desired. Top with chopped Reese’s.
Peanut Butter Icing:
- 1/2 C Butter
- 2 1/2-3 C Powdered Sugar
- 1 Tbsp Milk
- 1/2 C Peanut Butter, or more to taste
Cream the butter, then add half of the powdered sugar. Add the milk and continue to beat. Continue to add powdered sugar until you reach your desired consistency. Beat in the peanut butter.
- 1 C Chocolate Chips
- 1 Tbsp Butter
Microwave chocolate chips in a bowl, stopping to stir every 30 seconds. Once melted, stir in the butter.
Peanut Butter Drizzle
- 1 Tbsp Peanut Butter
Microwave peanut butter for 30 seconds. Stir until smooth.
